I love apple cider – just in case you couldn’t tell from the abundance of apple cider posts this season.

In past years, I used to only buy a half gallon to enjoy all to myself because my family is not as big of a fan of apple cider as I am. I know, what is wrong with those people? I’m usually the only one to drink it and as much as I love it, I would not be able to drink a whole gallon by myself before it started to spoil.

However, I’ve noticed that my two kiddos have taken a liking to the apple cider and the gallon is getting more and more empty by the day. I wonder what is happening to it…

Anyway, I had grand plans for the apple cider this year, so I decided to buy an entire gallon. Actually several entire gallons and they did not disappoint… we made an apple cider smoothie, apple cider waffles, apple cider martini, and now this gorgeous apple cider champagne.

Who would’ve thought that one drink could be so versatile and used in so many different things?

With New Year rapidly approaching, I of course started thinking about some of the cocktails that I would love to enjoy when the ball drops. Ya know, instead of the ubiquitous, plain-Jane champagne toast. That’s when it hit me to make this apple cider champagne with the rest of the apple cider in my fridge.

It turned out better than I could have imagined and I think this might be what I will be using to toast the new year – but first I will have to go out and buy more apple cider because I used it all for these.

Or maybe I’ll toast the new year with one of the other delish cocktails I have coming your way this week?!? Such a hard decision!

Ingredients

  • 2 cups apple cider
  • 1 bottle champagne
  • cinnamon sugar for rim

Instructions

  1. Fill shallow plate with cinnamon sugar mixture and dip each rim of glass in water, then in cinnamon sugar mixture to coat.
  2. Pour each glass 1/2 full with apple cider and top with champagne.
  3. Serve and enjoy!
