Egg baked right inside one-half of a creamy avocado.
Avocados are amazing things—they’re delicious on their own, but they also have a lot of healthy fats, dietary fibers, and vitamins, and despite their high caloric value, they’re remarkably easy to prepare. If you have an avocado that’s too firm to use for something else, or you’re just in the mood for something new and healthy for breakfast, try this little recipe! In a few minutes, you’ll have a delicious, protein and vitamin-packed breakfast treat that’s rich enough to keep you going all morning.
Baked Avocado Egg
- 1/2 avocado
- 1 large egg
- grated Parmesan cheese (optional)
Preheat oven to 425° degrees F and spray cooking sheet with nonstick cooking spray.
Slice avocado in half and take out pit. Scoop out a little more avocado from the center so that your egg will fit nicely without spilling over.
Crack egg into avocado and add salt, pepper, and parmesan cheese.
Place in oven and cook for 20-25 minutes or until your eggs are done to your liking.
