Try this delicious veggie burger made with black beans and quinoa.
I've never been a “veggie” burger kind of girl… I like my burgers like I like my steak, thick and juicy.
That being said, I have always wanted to try a home-made veggie burger because we all know that the ones you get from the store and restaurants are gross. So, I found this recipe and decided to give it a whirl. I also didn't tell the hubby that I was making a veggie burger for dinner, I just told him I was making “burgers.” Haha… sneaky, sneaky… but he actually enjoyed them!
These are also good to make ahead of time and stash some in the freezer for a quick, healthy lunch or busy weeknight dinner.
Black Bean Quinoa Burgers
- 1 1/2 cups cooked quinoa
- 1 small yellow onion finely chopped
- 6 sun-dried tomatoes drained, finely chopped
- 1 1/2 cups black beans drained, divided
- 2 cloves garlic minced
- 2 tsp steak seasoning
- 8 hamburger buns
In saucepan over medium heat, place onion and sun-dried tomatoes and cook, stirring frequently, until the onion is soft and translucent.
Stir in 3/4 cup black beans, garlic, steak seasoning, and 1 1/2 cups water. Simmer 9 to 11 minutes, or until reduced and most of liquid has evaporated.
Transfer mixture to food processor, add 3/4 cup cooked quinoa, and process until smooth. Transfer to bowl and stir in remaining 3/4 cup quinoa and remaining 3/4 cup black beans. Season with salt and pepper, to taste, and cool.
Preheat oven to 350° degrees F and spray baking sheet with nonstick cooking spray. Shape bean mixture into 8 patties and place onto prepared baking sheet.
Bake for 20 minutes or until patties are crisp on top. Flip patties with spatula, and bake additional 10 minutes or until both sides are crisp and brown.
