Christmas is just two days away and I could not be more excited! I still cannot believe that Christmas is already here because it seriously still feels like yesterday that 2015 just started. Well, maybe not exactly but at least summer should still be here.
Why is it that when you get older the years go by faster and faster? Why can’t they slow down so we can enjoy a little more out of them?
When I was little all I wanted was to grow up so I could do what I wanted when I wanted. And the years seemed to drag on and on and took forever to pass.
Now all I want it to be a kid again and not have any of the responsibilities that come along with being an adult and for the years to go slower. Oh, you too?
I digress…
Since Christmas is almost here and I am done with all my Christmas shopping, I am nowhere near done with all my wrapping. Actually, I haven’t even started wrapping.
Do you wait to the last minute to wrap, too, or am I just the only one?
I’m such a huge procrastinator and probably won’t even start wrapping until tomorrow and then spend 6 hours wrapping everything. Just like every year.
Oh well.. such is life.
There is one thing I will be enjoying during my wrapping marathon, though. These gorgeous blue coconut cocktails!
I, coincidentally, had some blue curaçao in the liquor cabinet and finally decided to make something with it. I think the last time I used it was a year ago… does blue curaçao go bad?
Nah… it can’t.
Anyway, I figured blue coconut cocktails would be the perfect vessel for the curaçao. With a hint of coconut and pineapple juice, you (or your guests) will be loving drinking these during your holiday festivities!
Or wrapping marathons… whatever…
Blue Coconut Cocktail
Ingredients
- 1 cup pineapple juice
- 1/2 cup blue curaçao
- 1/2 cup vodka
- 1/2 cup coconut cream
- 8 cups ice
- coconut flakes for garnish
Instructions
- Add small amount of cream of coconut and coconut flakes to two shallow dishes. Dip rim of glass into cream of coconut then into coconut flakes to rim glass.
- Add pineapple juice, blue curaçao, vodka, cream of coconut, and ice to blender. Blend on high until ice is crushed and desired consistency is reached.
- Pour cocktail into rimmed glass and serve immediately.
