Looking back on my recipe posts, I just realized it’s few and far between.

The funny thing is that I keep trying new recipes and photograph them but for some reason they just haven’t made it to the blog yet.

So here’s some Brown Butter Banana Waffles that I made last year!

These waffles are so good and definitely something that I will make many more times.

I love just about anything banana so when I saw these on Two Peas & Their Pod, I knew I just had to make them!

You can even make a double batch and then freeze the leftovers.

Then when you’re ready to eat a waffle, just pop it into the toaster!

Ingredients
  

  • 1/2 cup unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup packed light brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 large eggs
  • 2 cups milk
  • 1 tsp vanilla extract
  • 3 medium bananas very ripe, mashed

Instructions
 

  • Preheat your waffle iron, according to manufacturer’s instructions, to medium-high and spray with nonstick cooking spray.
  • In a small skillet, heat butter over medium heat whisking constantly. Cook until butter is melted and begins to brown. Remove from heat and let cool to room temperature.
  • In a large bowl, whisk together both flours, brown sugar, baking powder, salt, and cinnamon. 
  • Whisk in cooled butter, eggs, milk, and vanilla until just combined. Gently fold in mashed bananas. 
  • Scoop waffle batter by about 1/2 cupfuls onto preheated waffle iron. Cook, according to manufacturers instructions, until waffle is golden brown on both sides; about 5-6 minutes. Repeat with all remaining batter spraying with cooking spray in between batches so waffles do not stick.
  • Serve immediately, topped with extra bananas and fresh maple syrup.

Notes

To keep waffles crispy in between cooking, place on wire baking rack to cool.
