Brown Sugar Banana Bread Pancakes

  • 2 cups white whole wheat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2/3 cup milk
  • 1 Tbsp vanilla extract
  • 3 large bananas mashed
  • 2 Tbsp unsalted butter melted


  1. Heat skillet or griddle over medium heat and spray with non-stick cooking spray. 

  2. In a large bowl, combine flour, baking powder, sugar, salt, cinnamon, and nutmeg and whisk together. Mix in the milk and vanilla. Add in mashed bananas and butter and stir to combine.

  3. Using a 1/4 cup measure, scoop batter onto preheated griddle or pan and cook until bubbles form on top – about 2-3 minutes. Flip and cook for additional 1-2 minutes or until pancakes are done. Repeat with remaining batter.

  4. Serve immediately with your favorite toppings.
