You might be surprised to learn that chocolate chip cookies are not my favorite cookie.

I know, I know… terrible.

Yes, I do love chocolate chip cookies but they just aren’t the favorite. I like the chocolate chip cookie dough without the chocolate chips more then when it does have chocolate chips.

Most people look through the whole batch to find the cookie with the most chocolate chips… I’m the complete opposite. I want the cookie with the least chocolate chips.

Does that make me weird?

If it does then I’m cool with that. I personally like the cookies, like these cake mix cookies, that do not have any mix-ins in them.

Just plain cookies… doesn’t matter what flavor, red velvet, cake mix, sugar, beer cookies… they are the ones that I love and will eat by the dozen in one sitting. Seriously.

The cookies also must be soft and chewy. Which is exactly how these cake mix cookies turned out.

I based them off the red velvet cheesecake cookies that I made last year but just omitted the cheesecake filling. Oh, and I changed the type of cake mix that I used from red velvet to plain vanilla.

I also decided to add some sprinkles. Because, ya know, sprinkles make everything better.

These cookies are super simple to make and are perfect for when you are craving some cookies but don’t have all the ingredients for a cookie from scratch or are just lacking a couple ingredients but have a box of cake mix on hand.

Ingredients
  

  • 1 box cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350° F and line baking sheet with parchment paper or spray with non-stick cooking spray. 
  • In large bowl, add all ingredients and mix until combined. 
  • Using a cookie scoop, scoop out dough and place onto prepared baking sheet.
  • Bake at 350° F for 11-13 minutes until cookies are just beginning to brown on the edges and middles are still soft. 
  • Let cookies cool on baking sheet for about 5 minutes before transferring to wire cooling rack to cool completely.
