Protein pancakes made to taste just like cinnamon banana bread.
Mother's Day is tomorrow and I thought I would take this time to say Happy Mother's Day to all the amazing mothers out there! There is no greater reward than being a mother and raising beautiful children.
I also want to take some time to celebrate and talk about my mom for a little bit.
I seriously have the best mom ever. Really.
This week I've been on a mini-girls-vacation. It was definitely much needed! My best friend asked me if I wanted to go on a girls trip a couple months back, just me and her, time away from hubby's and from kiddos (though she doesn't have any kids, yet) to just relax and shop. And drink wine and beer. Ya know, the usual. Of course I said yes. I haven't been on a girls mini-vacation in a long time and this was much needed. My only problem… who am I going to get to babysit for me while I'm gone? Certainly not the hubby because he doesn't work a “normal” 9-5 work schedule where I could just find someone for the day and then he would be home after. Nope. I need someone that can come and stay at my house for 3 days while I'm away. Who better than my mom? But she lives in Florida, I live in Michigan.
When I asked her about it she said, “Yes, of course!” So, she drove all the way to Michigan just so that I could have a babysitter for 3 days so that I could go have some girl time without kids. Any excuse to come and see her grand-babies, I think.
Seriously. Best. Mom. Ever.
Moving on… to pancakes! What better way to celebrate your mom this mothers day than with some banana protein pancakes? Yum!
These pancakes seriously taste just like banana bread, but just in pancake form. No better way to start the day… be it Mother's Day or not!
Cinnamon Banana Protein Pancakes
- 1 cup old fashioned oats
- 1 banana
- 1/2 cup cottage cheese
- 2 eggs
- 1 tsp ground cinnamon
- Spray griddle with non-stick spray and heat over medium-high.
- Add rest of ingredients and blend on high until combined.
- Pour batter by 1/4 cup-fulls onto hot griddle and cook until bubbles start to form, about 1-2 minutes. Flip and cook through.
- Serve immediately with your favorite topping.
