Do you remember me telling you that I was on a huge cinnamon kick lately?
Well, I still am and cannot get enough cinnamon in my life right now.
No, I am not pregnant.
After making the cinnamon roll protein shake for the 100th time in the morning for breakfast, I decided I wanted a little something different and sweeter.
So here I bring you cinnamon roll sugar cookies!
These cinnamon roll sugar cookies definitely satisfied my sweet tooth and craving for cinnamon.
Though you don’t need to have a raging cinnamon tooth to whip up a batch of these cookies.
You just need about 30 minutes and a craving for something sweet… or your kids begging you to make some cookies.
My daughter loved these. She was skeptical at first… as always… but after she tried her first bite she was hooked.
Before I knew it, the entire batch was gone. That day! I didn’t even see her take any more than the original 1 that I gave her.
Sneaky Sneaky.
And even though these look super fancy and hard to make, they are definitely not.
You can whip them up on a lazy afternoon. Or just about any afternoon for that matter.
Cinnamon Roll Sugar Cookies
Ingredients
- 1 large egg
- 1/4 cup granulated sugar
- 3 Tbsp vegetable oil
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 cup powdered sugar
- 1 Tbsp milk
Instructions
- In a medium bowl, mix together egg, sugar, oil, and vanilla until fluffy and combined. Add flour, baking powder, and cinnamon, mixing well until soft dough is formed. Place in the refrigerator and chill for 30 minutes.
- Preheat oven to 350° F and prepare baking sheet by spraying with non-stick cooking spray or lining with parchment paper. Set aside.
- In a small bowl, combine sugar and cinnamon for topping.
- Scoop out dough by Tablespoonful and roll out on work surface until thin and about the size of a pencil. Roll into a spiral shape and then transfer to cinnamon sugar bowl to coat entire cookie dough with cinnamon sugar.
- Place on prepared baking sheet and continue process until all dough is used up.
- Bake at 350° F for about 10 minutes or until edges are golden brown and cookies are set. Allow to cool on baking sheet before transferring to wire rack or plate.
- To glaze the cookies, add powdered sugar and milk in small bowl and mix until glaze forms. If glaze is too thick or thin for your liking, add more powdered sugar or milk accordingly. Use spoon to drizzle over cookies before serving.
