In the beginning of 2013 I completed Beachbody Ultimate Reset Cleanse. To say it was hard is an understatement.

For me anyway.

If you're someone that eats clean already then this cleanse shouldn't be a problem for you. However, I am not someone that eats clean all the time… I have my days that I am really good and then days that I am not so good.

But I digress…

I definitely learned a lot from the cleanse about eating and fueling my body properly. I also picked up a few new recipes that I would have never though to try before.

One of them being the Cucumber Tomato Salad… so GOOD!

I have actually made this recipe quite a few times for lunch or just a quick snack. The hubby even likes it so that means it has to be good! Haha

So here you go. One of the many, but my favorite recipe from the Ultimate Reset. Enjoy!

Cucumber Tomato Salad

Simple tomato and cucumber salad with a tangy, vinegar based dressing.

Ingredients

  • 2 Tbsp red wine vinegar
  • 1 tsp balsamic vinegar
  • 1 Tbsp lemon juice
  • 2 tsp olive oil
  • 1 medium cucumber sliced into 1/2 moons
  • 1 cup cherry tomatoes halved
  • 1 Tbsp red onion minced
  • 1 Tbsp fresh flat-leaf parsley minced

Instructions

  1. Combine red wine and balsamic vinegars, lemon juice, and oil in a small bowl; mix well. Season with salt and pepper. 

  2. Add sliced cucumber, tomatoes, onion, and parsley and stir to coat with dressing.

  3. Serve immediately or refrigerate for a couple hours until ready to serve.

  1. I love the combination of tomatoes, cucumbers and onions! My husband, on the other hand, does not like tomatoes, cucumbers or onions! Ha! That just means, I’ll be making this and eating it all by myself.

  2. I think this salad sounds lovely, and like something everyone would enjoy! And since we’re talking “other half” food preferences… mine didn’t used to dress any salad that had lettuce. Those had to be plain, but something like this needed a vinegar/oil topping. :-p

  3. I’ve been trying to eat healthier lately but most recipes I see out there are plain boring. Except yours! I tried this salad yesterday and it was just divine. Can’t wait to try your other recipes.

  4. I can tell spring is almost here because I am totally craving fresh and easy dishes and this one is going on my list. I don’t worry so much about “clean eating” and just focus on eating well, which means indulgences are okay 🙂 I try to balance it out with things like this salad. P.S. Great photos, too!
