Happy Monday folks!

Folks? Who says folks anymore? Eh… I’m gunna go with it.

Anyway, Happy Monday! My mom is back in town to visit me again and this time she brought my sister! I love it when my mom comes to visit. I love having guests at my house and full of fun and excitement.

I guess that’s I product of my growing up… I have a big family. Oldest of four children, so there was never a dull moment in my house.

When I was a kid, I hated it. I always wanted to be left alone and just have some peace and quiet.

Then when I moved out, I thought it was the greatest thing ever (maybe all 18 year-olds do, haha) but after a while I noticed I went home to “visit” almost every day.

I think I really craved the chaos that I one longed would just go away.

Now that I live about 1,200 miles away I have peace and quiet all the time and the visits to my mom’s house are really hard to do as frequently as I once could.

Plus, now all my baby brothers and sisters have grown up and flown the coop so going back isn’t as exciting and chaotic as it once was.

Now that I have my on two children, my house is slightly chaotic and exciting but there are still many times when it’s peace and quiet. I love both times and I especially love when my mom comes to visit because then it feels more like home when I was growing up.

Bonus that my husband loves my mom, too! Even though he didn’t grown up with a big family, he really wants a big family and secretly craves the chaos too.

So, when I asked my mom to come help me babysit the kids so I could go to Nashville in June for our annual Coach Summit, I knew she would say yes and I was even more excited when she told me that my littlest sister wanted to come too.

She not really little anymore since she just turned 18 two weeks ago.

Ugh… that makes me feel old.

Anyway, they are going to be here for a month! We have a ton of things planned… like heading to Chicago for the day, Traverse City for a few days, going to the beach, etc.

And they are waiting on me right now to finish up this post so we can head to the beach since it’s beautifully sunny and 70 degrees outside.

So onto the topic at hand… Green Chili Turkey Tacos!

My family loves tacos and I think we have a taco night at least once a week. These have now made it into the top 5 best tacos I have made for my family (yes, my husband voted… haha) and they are surprisingly simple yet seriously delicious.

Basically just throw everything into a pan to cook, throw into oven for a few minutes, top and done.

I love things that are simple. Enjoy!

Ingredients
  

  • 1 lb ground turkey
  • 1/2 medium yellow onion finely diced
  • 1 package taco seasoning mix
  • 1 (4.5 oz) can diced green chilies
  • 1 (14.5 oz) can diced tomatoes drained
  • 1 Tbsp garlic minced
  • 8 small corn or flour tortillas
  • 1 cup shredded Mexican cheese

Instructions
 

  • In skillet heated to medium-high, brown the turkey and onion until fully cooked and no longer pink; about 5-6 minutes.
  • Add the taco seasoning, garlic, green chilies, and diced tomatoes and stir to combine. Cook for 3-5 minutes until heated through. 
  • Remove from heat and stir in shredded cheese. 
  • Spoon mixture into tortillas and top with sour cream, avocados, more cheese, or whatever your heart desires!
