With August being a back-to-school month for most of the country, it’s hard to think of it as still a summer month.
Back-to-school marks the end of summer and the beginning of fall for some… but for us it’s still summer.
We don’t have to head back to school until after Labor Day and while I envy all the moms who are finally getting their kids back into school and re-claiming some “me time,” I am glad that we don’t go back until September.
It gives me more time with my babies and they get a couple extra weeks outside in the sun with their friends.
While our summer was far from stellar… with my husband being gone for 2 of the 3 months and my oldest being in Florida for most of the summer… we still had fun.
It gave me some quality time with the littlest and my hubby, when he was home.
Fortunately there is still about a month of summer left and my oldest daughter will be home in about a week.
So we will head out and do some last minute, fun summer things before shipping her off back-to-school.
In the meantime, while I am waiting for her to get back, my littlest and I have been enjoying lazy days out on the back patio and playing in the mini-pool that we have for her.
I would have loved to take her to the beach instead, but a 15-month-old and the beach do not mix. Haha.
She loves to run everywhere and the beach wears me out enough without having to chase after her all day.
So instead we stick to the back patio… which has a gate and I can keep her confined to one area for the day. Much easier.
While enjoying lazy days, I decided to try my hand at making some homemade lemonade.
To be honest, like many things, I though lemonade was one that was super hard to make.
Again, I was wrong. Seriously wrong.
It’s the exact opposite and I jazzed mine up with some watermelon that we had in the fridge.
This lemonade was perfect for quenching my thirst on these hot summer days and even the baby enjoyed it.
Also I was editing these photos today, I noticed that in one of the photos it totally looks like the ice is smiling at you. See even the ice thinks that this watermelon lemonade is wonderful.
Either that or it was just saying cheese for the camera. I’ll take either. Haha.
Watermelon Lemonade
Ingredients
- 6 cups watermelon cubed
- 3/4 cup lemon juice
- 2/3 cup stevia or sugar
- 4 cups water
Instructions
- Add cubed watermelon to blender and blend on high until well pureed. Pour through a fine mesh strainer lined with cheesecloth into a gallon jug.
- Gather up sides of cheesecloth and squeeze to force out as much watermelon juice as possible. Discard pulp.
- Add lemon juice, cold water, and stevia and stir until sugar has dissolved. Taste for sweetness and adjust accordingly.
- Serve immediately over ice with a sprig of mint (if desired). Store covered in refrigerator for up to one week.
