My babygirl started her first day of 3rd grade today. I’m not quite sure how to feel about this.

I am super happy that she is back in school because now I can get more work done without constant interruption.

But I am sad that she is getting so big and growing so fast.

Is there a pause button somewhere that I can push to make her stop growing for just a year or two? Maybe?

So of course she woke up super early this morning, even before I went in to get her, because she was so excited to start the day and get to school. Are all kids like that for the first few years of school?

I really don’t ever remember being happy to go to school. Maybe I was?

Oh well, to each his own.

Because she was up so early, I decided to make her this delicious Chobani inspired fruit and protein smoothie to start her day.

She loves fruit smoothies just as much as I do and I figured I could do something special for her first day and make it double flavor and double layered.

I usually make fruit and protein smoothies with protein powder but this time I wanted to shake things up a little bit and use Greek yogurt instead.

Since Chobani Greek yogurt is so versatile and I usually always have a tub in the fridge, it was the perfect ingredient to add to the smoothie while also giving it the protein punch that I wanted.

This recipe makes two smoothies, so we both sat together and drank them while waiting for the clock to tick down to signal it was time to head to school.

She devoured hers in about 0.4 seconds while I savored mine a bit longer. That and I didn’t want to get a brain freeze from drinking too fast.

Don’t let the double layer fool you and think that it takes a ton more time to make than a regular smoothie.

I promise you that it does not take more than a couple extra seconds and you will have a gorgeous smoothie just like this for your morning breakfast or afternoon snack.

Ingredients
  

Mango:
  • 1 1/2 cup mango frozen
  • 1/3 cup unsweetened coconut milk
  • 1/2 cup vanilla Greek yogurt
  • 1/2 Tbsp stevia or to taste
Strawberry:
  • 1 1/2 cups strawberries frozen
  • 1/3 cup unsweetened coconut milk
  • 1/2 cup vanilla Greek yogurt
  • 1/2 Tbsp stevia or to taste

Instructions
 

  • In a blender, add frozen mango, Greek yogurt, coconut milk, and sweetener. Blend on high for about 30 seconds or until smooth. If smoothie is too thick, add a splash more coconut milk.
  • Pour between 2 glasses. Rinse blender.
  • Using same blender, add frozen strawberries, Greek yogurt, coconut milk, and sweetener. Blend on high for 30 seconds or until smooth. If smoothie is too thick, add a splash more coconut milk.
  • Pour strawberry mixture slowly over mango mixture already in glasses. Garnish with fresh strawberries or mangoes (if desired) and serve immediately.
