Happy day-before-fourth-of-July!

My mom and I have been crazy busy working out in the yard the past couple days and I am super tired and sore this morning.

I’ve said it before, but it’s definitely worth repeating, that I absolutely love when my mom comes to visit. And so does the hubby! How many husband do you know that love their mother-in-law’s as much as my husband does? Haha

But seriously, the reason I love her visiting so much – besides the fact that she helps with the kids and watches them so we can go on date nights – is her ability to get me motivated to get my ever lengthening honey-do list complete. Oh the joys of homeownership.

We’ve finally finished staining the fence and I built a new planter box interim when it rained for a couple days and we couldn’t work outside. Now that it’s been nice out for a few days we’ve moved onto the landscaping and mulching the front and back.

It’s a big job and I’m super grateful that she’s here to help me get motivated to get it done. Otherwise, if she wasn’t, it would still be haunting me and I would just keep putting it off and saying I’ll get to it eventually. <– story of my life. Haha I am the biggest procrastinator.

Anyway, I went to Meijer this weekend to stock up on beer and sandwich making supplies. When you’re working outside all weekend you don’t really want to eat anything too heavy because then you’re just not motivated to finish working. So I grabbed some deli turkey and chicken, a bunch of toppings and my favorite Sargento® cheeses.

Turkey Avocado Club Sandwich

With this sandwich, I made it club style with a toasted bread, bacon, meat, cheese, and a few extra toppings. This is a very large sandwich and while you could definitely eat it on your own if you’re that hungry I would recommend splitting it between two people.

That’s what my mom and I did at least. Then headed back outside to finish the yard work. I have to say that it’s coming along nicely and I’m ready for it to be done so I can relax for the rest of the summer.

Ingredients

  • 3 slices marble rye bread toasted
  • 1 leaf lettuce
  • 3 slices provolone cheese
  • 4 slices thick-cut deli turkey
  • 1/2 large tomato sliced
  • 3 slices pepper jack cheese
  • 4 slices thick-cut deli chicken
  • 3 slices thick-cut bacon cooked
  • 1/2 small avocado sliced
  • 1/4 cup fresh alfalfa sprouts

Instructions

  1. Layer all ingredients into sandwich starting with base of marble rye toast. 

  2. Place lettuce on bottom followed by sliced provolone cheese, turkey, tomato, and second slice of marble rye bread.

  3. Place pepper jack cheese on top of second slice of bread followed by chicken, bacon, sliced avocado, and sprouts.

  4. Top with last piece of bread, slice and serve.
