Pumpkin Energy Bites
No-bake energy bites make a perfect pick-me-up snack for your afternoon made with fresh pumpkin, dates, and rolled in coconut flakes.

Ingredients

cup
pitted dates
1/2
cup
raw pecans
1/3
cup
pumpkin purée
1/4
cup
coconut flakes
2
tsp
pumpkin pie spice
2
tsp
vanilla extract
Instructions
Place dates into a medium bowl and cover with about 1 cup of warm water. Let soak for 10-15 minutes. Drain.
While dates are soaking, add pecan halves to food processor and pulse until finely ground.
Add drained dates, pumpkin, coconut, pumpkin pie spice, and vanilla; pulse until incorporated, scraping down the sides occasionally.
Scoop out mixture into medium-sized bowl. Cover and refrigerate for 30 minutes.
Remove from refrigerator and roll into tablespoon-sized balls then roll in extra coconut.
