I love apple cider – just in case you couldn’t tell from the abundance of apple cider posts this season.
In past years, I used to only buy a half gallon to enjoy all to myself because my family is not as big of a fan of apple cider as I am. I know, what is wrong with those people?
I’m usually the only one to drink it and as much as I love it, I would not be able to drink a whole gallon by myself before it started to spoil.
However, I’ve noticed that my two kiddos have taken a liking to the apple cider and the gallon is getting more and more empty by the day. I wonder what is happening to it…
Anyway, I had grand plans for the apple cider this year, so I decided to buy an entire gallon.
Who would’ve thought that one drink could be so versatile and used in so many different things?
With New Year rapidly approaching, I of course started thinking about some of the cocktails that I would love to enjoy when the ball drops. Ya know, instead of the ubiquitous, plain-Jane champagne toast.
That’s when it hit me to make this apple cider champagne with the rest of the apple cider in my fridge.
It turned out better than I could have imagined and I think this might be what I will be using to toast the new year – but first I will have to go out and buy more apple cider because I used it all for these.
Or maybe I’ll toast the new year with one of the other delish cocktails I have coming your way this week?!? Such a hard decision!
Apple Cider Champagne
- 2 cups apple cider
- 1 bottle champagne
- cinnamon sugar for rim
- Fill shallow plate with cinnamon sugar mixture and dip each rim of glass in water, then in cinnamon sugar mixture to coat.
- Pour each glass 1/2 full with apple cider and top with champagne.
- Serve and enjoy!
