Ah, banana bread… one of my all-time favorite treats. There is nothing better than a fresh out of the oven, warm slice of banana bread with a little melted butter on top.
Mmmm… it’s making my mouth water just thinking about it.
So, when I found a recipe for banana bread waffles on Pinterest, I just HAD to try them. I did alter the original recipe because it was for “overnight” yeasted waffles and I didn’t read it until the morning of.
Banana Bread Waffles
- 4 Tbsp unsalted butter melted
- 1 3/4 cup milk
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 Tbsp packed light brown sugar
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground ginger
- 1 cup banana mashed
Preheat waffle iron to medium according to manufacturer's instructions and spray with nonstick cooking spray.
In a small bowl, whisk together the butter, milk, vanilla, and eggs. Add the flour, brown sugar, salt, and spices mixing until combined. Stir in mashed bananas.
Pour by 1/3 - 1/2 cupfuls into hot waffle iron and cook, according to manufacturer's instructions, until waffles are done.
Serve immediately with your favorite toppings.
