Happy Sunday, ya’ll! Toady seriously feels like the Monday-est Sunday ever. I just don’t understand what is happening today but I am seriously off my game.
So I decided to make another cocktail instead and just sit in the backyard and do nothing for the rest of the day.
I had some leftover peaches from the peach prosecco cake that I made a few weeks back and didn’t want them to go bad. Into a cocktail it is!
Today’s concoction is a peach basil bourbon smash. I’m loving the smokiness of bourbon lately and the addition of the fruity peach and lemon juice just gives it a bright pop of flavor.
I also used some of the fresh basil I just planted in our garden that I built a couple weeks back. Just another day that I woke up and had a bug to do something and built a garden box.
Anyway… haha! Grab some basil leaves, peach nectar, fresh peach slice, and lemon juice. Add to the bottom of a cocktail shaker and muddle lightly with a drink muddler or the end of a wooden spoon.
Add honey, lemongrass paste, and bourbon. Fill the shaker 2/3 full of ice then cover and shake vigorously.
Pour the contents into a highball or collins glass and top with more ice. Add club soda to fill, if needed and desired, then garnish with extra basil sprigs and peach slices.
Sip and enjoy! Super refreshing and delicious.
