It’s Monday… you (and me) deserve a cocktail. It’s not even noon yet and I’m already ready for a drink. It’s just been one of those days.
My oldest has been out of school now for like 4 days and I’m already ready to send her back.
It’s such a double edged sword… she’s such a big help with the littles (sometimes) but she also is the one who riles them up and makes them cry for reasons I don’t even understand.
Then there’s the running all over the house and fighting with everyone. Ugh… I’m over it.
So instead I’m bringing you this beautiful pineapple rum punch that I made over the weekend. We ended up having a few friends over and I made a little cocktail for us to enjoy.
Usually I’ll make a sangria of some sort since it’s easy to make a big batch in a container but I was in the mood for something a little different and not wine.
This drink fit the bill perfectly because you can batch make it if you want, just adjust the measurements accordingly and dump it all into a big jug.
While I’m not a huge fan of coconut flavor (though this drink is one of your favorites and I actually enjoy), I am a huge fan of pineapple.
Mix it with rum and perfection.
I served mine with mini pineapple wedges because I found this sweet large fruit cutter at TJ recently and wanted to give it a try on some pineapple.
I usually buy the pre-cored and peeled pineapple because it’s such a pain IMO to cut but this little contraption made it super easy.
I just left the rind on after cutting it to give it a little color to the beautiful yellow cocktail.
It’s 5 o’clock somewhere… drink it up!
Pineapple Rum Punch
Ingredients
- 1/2 cup white rum
- 1 cup pineapple juice
- 1/4 cup lime juice
- 1/2 cup ginger ale
- pineapple slices for garnish
Instructions
- In a small pitcher, combine rum, pineapple juice and lime juice.
- Divide mixture between 4 ice-filled glasses and top with ginger ale.
- Garnish with fresh pineapple wedge and serve immediately.
