Ingredients
1largeegg
1/4cupgranulated sugar
3Tbspvegetable oil
1tspvanilla extract
1cupall-purpose flour
1/2tspbaking powder
1tspground cinnamon
Topping:
1/4cupgranulated sugar
1tspground cinnamon
Glaze:
1/2cuppowdered sugar
1Tbspmilk
Instructions
In a medium bowl, mix together egg, sugar, oil, and vanilla until fluffy and combined. Add flour, baking powder, and cinnamon, mixing well until soft dough is formed. Place in the refrigerator and chill for 30 minutes.
Preheat oven to 350° F and prepare baking sheet by spraying with non-stick cooking spray or lining with parchment paper. Set aside.
In a small bowl, combine sugar and cinnamon for topping.
Scoop out dough by Tablespoonful and roll out on work surface until thin and about the size of a pencil. Roll into a spiral shape and then transfer to cinnamon sugar bowl to coat entire cookie dough with cinnamon sugar.
Place on prepared baking sheet and continue process until all dough is used up.
Bake at 350° F for about 10 minutes or until edges are golden brown and cookies are set. Allow to cool on baking sheet before transferring to wire rack or plate.
To glaze the cookies, add powdered sugar and milk in small bowl and mix until glaze forms. If glaze is too thick or thin for your liking, add more powdered sugar or milk accordingly. Use spoon to drizzle over cookies before serving.
