Ingredients
12ozraspberriesfresh
1cuplemon juice
1/2cupwater
1/2cupgranulated sugar
3 1/2cupsclub soda
Instructions
Blend the raspberries with 1/4 cup of the water until smooth. Strain the puree through a fine-mesh sieve to remove seeds.
Combine the remaining 1/4 cup of water and the sugar in a small saucepan over medium heat. Stir until the sugar dissolves completely. Bring the mixture to a simmer and cook for 1 minute. Remove from heat and let cool slightly.
In a large pitcher, combine the raspberry puree or muddled raspberries, simple syrup, lemon juice, and club soda. Stir well to combine. Taste and adjust sweetness by adding more stevia or simple syrup, if desired. Add ice and serve immediately, garnished with reserved raspberries if using.
