Ingredients
8wooden skewers
2Tbspolive oil
1lbground beef
1largeegg
2clovesgarlicminced
1/2tspground cinnamon
1/4tspground nutmeg
1tspground coriander
1tspground cumin
1/4tspground ginger
1largered onioncubed
1largeeggplantquartered and diced
Instructions
Begin by soaking the wooden skewers in water for 10-20 minutes to prevent charring when on the grill. Preheat the grill to medium and brush grill grates with olive oil.
In a large bowl add ground beef, egg, garlic, cinnamon, nutmeg, coriander, cumin, and ginger. Mix to combine and incorporate all ingredients thoroughly.
Form into 2-3 inch meatballs and place on wooden skewers alternating between meatball, eggplant, and red onion.
Grill over medium flame turning occasionally until meat is cooked through; about 12-14 minutes.
