In the beginning of 2013 I completed the Beachbody Ultimate Reset Cleanse. To say it was hard is an understatement. For me anyway.
I’ve never been one that has had a desired to do a cleanse or want to try and cleanse my body of toxins or whatever else.
But I wanted to give it a try and see if I could do it.
If you’re someone that eats clean already then this cleanse probably won’t be as hard for you as it was for me.
However, I am not someone that eats clean all the time… I have my days that I am really good and then days that I am not so good.
I more follow an 80/20 rule and like to enjoy a little bit of everything in moderation.
Though, some days I do indulge just like many people.
The cleanse isn’t like a juice only cleanse, you actually eat real food for 21 days. But it’s specific food designed to “cleanse” your body and help you get back onto a healthier eating track.
Even though I don’t think I’ll ever do it again, I definitely learned a lot from the cleanse about eating and fueling my body properly.
I also picked up a few new recipes that I would have never thought to try before. Which is always a good thing.
One of them being the Cucumber Tomato Salad… so GOOD with a soy vinegar based dressing and delicious, crispy cucumbers, tomatoes, and red onions.
Since completing the cleanse, I have actually made this recipe quite a few times for lunch or just a quick snack to keep on hand for when I want to much on something.
The hubby even likes it so that means it has to be good! Haha
So here you go. One of the many, but my favorite recipe from the Ultimate Reset. Enjoy!
Cucumber Tomato Salad
Ingredients
- 2 Tbsp red wine vinegar
- 1 tsp balsamic vinegar
- 1 Tbsp lemon juice
- 2 tsp olive oil
- 1 medium cucumber sliced into 1/2 moons
- 1 cup cherry tomatoes halved
- 1 Tbsp red onion minced
- 1 Tbsp fresh flat-leaf parsley minced
Instructions
- Combine red wine and balsamic vinegars, lemon juice, and oil in a small bowl; mix well. Season with salt and pepper.
- Add sliced cucumber, tomatoes, onion, and parsley and stir to coat with dressing.
- Serve immediately or refrigerate for a couple hours until ready to serve.
