My daughter loves chocolate (chocolate chips in particular) and whenever I make something with chocolate chips, the chips somehow miraculously start disappearing.
I turn my back and the once full bag is mysteriously missing about a child-sized handful worth.
Happens. Every. Time.
I’ve started getting smart. Whenever I cook with chocolate chips now, it’s either while she’s outside playing or, in this case, while she was still sleeping.
Bwahahahaha (insert evil laugh)!!
I really don’t mind her stealing the chocolate chips, if she wants to… that’s cool.
But there are sometimes that I only have exactly the right amount for a recipe and just cannot have them disappearing.
That was not the case with these.
I had a brand-new bag sitting on the counter when she woke up and that was the first thing that she went for. Not even a good morning hug… just straight for the chocolate chips.
Than after shoving a few in her mouth did she decide to give me a hug and realize that I was making chocolate chip pancakes.
She then proceeded to pour herself a glass of milk and sit at the counter waiting for me to plate her some pancakes.
I, being the great mom that I am, added an extra handful of chocolate chips to the top of hers.
She inhaled them in record time and even asked for seconds.
Not something she does often so I was happy to oblige, with another -smaller- handful of chocolate chips on top.
I think I may have won “Best Mom Award” award with these.
Chunky Monkey Pancakes
Ingredients
- 1 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 Tbsp granulated sugar
- 1 cup milk
- 3 Tbsp unsalted butter melted
- 2 large eggs
- 1 tsp vanilla extract
- 2 large bananas diced
- 1/2 cup mini-chocolate chips
Instructions
- Preheat electric griddle to medium heat. Spray with non-stick cooking spray.
- In a large bowl, mix together flour, baking powder, baking soda, salt, and sugar. Add milk, melted butter, eggs, and vanilla and mix until just combined. Gently fold in the diced bananas and chocolate chips.
- Pour batter by 1/4 to 1/3 cupfuls onto pre-heated griddle. Cook until small bubbles begin to form and edges are slightly browned, about 2-3 minutes. Flip and cook through, about another 2 minutes.
- Serve immediately with extra bananas, chocolate chips, and favorite syrup or topping.
