Here we are in the middle of summer and it is HOT outside.
All I can think about is sitting by the pool (or on a tropical island, actually, preferably on a tropical island) drinking fun cocktails with little mini umbrellas in them.
Yeah, sounds like paradise to me.
But I neither have a pool (yet) nor am I currently sitting on a tropical beach somewhere. But I’m making the most of it.
I’m spending my summer outside relaxing on a lounge chair, with a sweet watermelon umbrella, while the kiddos play in the kiddie pool. If only I was small enough to fit in the kiddie pool…
No shame, I have actually gotten in the kiddie pool to cool off. And to play with the kids of course.
And since I am not sitting on the tropical island, I can for sure bring the tropical drinks to me.
Peach season is in full swing and I am making all the peach things! So when I saw this Peach Bellini from my friend Meaghan at Cook Craft Love, I just knew I had to make it.
Traditional Bellini’s come from Italy and are made with sparkling wine and a purée of peaches or peach nectar and served straight up without ice – kind of like a mimosa but with peaches.
But since it’s nearing the 90° mark during the days, I want something super cold and frozen.
So I made a Frozen Peach Bellini instead.
This drink definitely made me feel a little more tropical while drinking it, even if I’m not sitting on that tropical island. And I do have to say that this might just be my drink of choice this summer.
Just put this drink into a red solo cup so the kids won’t knock it over and break my champagne glasses and I’m golden.
Plus, doesn’t it feel more beachy with a red solo cup anyway? haha
Frozen Peach Bellini
Ingredients
- 3 cups peaches frozen
- 1/2 cup peach nectar
- 1 (750ml) bottle prosecco
Instructions
- Add frozen peaches and peach nectar to blender and blend until smooth.
- Scoop peach mixture into champagne glasses, filling 1/2 way.
- Top with prosecco and garnish with peach slices.
